Payasam is a sweet dish or dessert of South Indian. Especially It is very important and common food in traditional marriage function for lunch in India. The Word "Payasam" originated from sanskrit word "Peeyusham" means nectar which is also called as Amrutham. It can be prepared from sugar or jaggery with ingredients such as vermicelli, wheat flour, Aval (Poha), Dal, rice...etc

Vermicelli - 1 cup
Ghee - 1 teaspoon
Milk - 2-3 Cups
Cardamom powder -2 pinches
Cashew - 8-10 nos (broken)
Raisins - 8-10 nos
Sugar as required
Method
In a Thick bottomed vessel roast the vermicelli untill it turns to golden brown, once its roasted, add some water and boil, after it turns soft, add some sugar until it disolves completely, remove from the stove, Now add required Milk and cardamom powder to the vermicelli, now add Ghee roasted cashew nuts and raisin in the payasam. Thats it... you can now serve this payasam as hot or cold ...Traditional Payasam is Now ready
